Okay. Since I’m Italian you’re getting my Italian stew/soup. But it has pork sausage. You can change to chicken sausage.
Heat up about 2 tbsp of olive oil in a pot. Brown half an onion (or more, it just depends on your taste). Throw in a clove or two of minced garlic. I like to do the frozen garlic. Brown half a pound of Italian sausage in the same pot. Add a 28 oz can of San Marzano tomatoes. Add in a tsp of dried basil (crushed). Salt and pepper. Add a cup of water. Let simmer for 20 minutes. If you need to add more water after 20 minute, do and let come to a boil. Add an 8oz package of cheese tortellini. When tortellini is almost done, add 2 handfuls of fresh baby spinach.
